La Cava Coffee Company, 104 E. Gay St. West Chester, December 26. Pass. Observed ice scoop stored in the ice machine and covered in ice. To prevent potential contamination of the ice the scooper must be stored out of the machine. Facility staff stored scoop above machine in plastic container during inspection. Time/temperature controlled ready-to-eat oats observed without a date mark on them in the display case cooler. Facility must follow 7 day (or less) date marking guidelines to prevent potential pathogen growth. Oats were discarded by facility staff. No thermometer in the undercounter cooler below the espresso machine. Provide thermometer in that cooler immediately. The quaternary sanitizer concentration in the 3-compartment sink was observed at 150ppm as opposed to 200-400ppm to prevent potential pathogen growth. Facility staff added more sanitizer to reach the required concentration. Utilize the recipe from today's inspection (3 cap-full with 3/4 sink full). Post directions above sink. Facility does not have a full-time certified food manager (there is a certified food handler). Facility must obtain a certified food manager within 3 months and provide a copy of the certificate within 3 months.
Market Street Grille, 6 W. Market St. West Chester, December 26. Fail. The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Must work within facility limitations to ensure food safety. An open employee's beverage container was observed in prep area in multiple locations, a food preparation area. Employee food observed intended for consumption stored on clean plates. Dented, distressed canned items observed in dry storage area and intended for use or sale in the food facility. Squeeze bottles and food containers, in the kitchen and in storage, were not labeled with the common name of the food. Ensure that food removed from their original container are labeled with the common name of the food item. Observed egg containers and hashbrown boxes stored directly on the floor in kitchen area, rather than 6 inches off of the floor as required. Gravy and Cream chip beef, was not cooled from 135 degrees F to 70 degrees F in 2 hours, after preparation. Moved to freezer to begin rapid cooling. Observed food placed hot in the refrigerator/walk-in cooler in containers greater than 4 inches deep, which is not a proper cooling method. Several items in the cook line area, rather than 41 degrees F or below as required: American cheese 66 degrees F; Provolone 65 degrees F; Sausage 50 degrees F; Dressing 68 degrees F; hash browns 76 degrees F. Time/Temperature Controlled for Safety (TCS) ready-to-eat food prepared in the food facility and held for more than 24 hours, located through facility, is not being date marked. beef, a potentially hazardous ready to eat food requiring datemarking, in the walk in area, was beyond the date-marking and not labeled with slacking dates. Slats of eggs, pooled eggs and hash browns stored outside of temperature control for use throughout service period. These foods must be tracked to prevent extended periods of temperature abuse. Develop a system of marking foods held at ambient temperature to ensure they are sold, served, or discarded before they become unsafe. Food facility has a reminder statement on the menu for foods that are/or could be served raw or undercooked to the consumer; however, does not clearly disclose which foods the reminder statement applies to. Dents in cans can potentially cause botulism growth. These cans were put aside in the designated dented can area to be discarded/returned to vendor. Observed multiple deli meats that were opened, sliced, and rewrapped not being date marked. These were discarded by person in charge. Ensure to follow 1-week date marking guidelines to prevent pathogen growth with time/temperature controlled ready-to-eat foods. Observed biofilm buildup along the ice shield in the ice machine, a food contact surface. Clean and sanitize to prevent potential contamination of ice from biofilm. Observed tongs with food debris in an out of use pot with food debris within. These items were cleaned and sanitized during inspection by kitchen staff. Clean the following: Any dust/food debris off the top of the pizza oven; The dirty rags from under the deep fryers. Soap was not available at the handwash sink at the deli/coffee counter for proper handwashing procedures. Soap was provided by kitchen staff during inspection.

Product was voluntarily discarded. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Sample pouch of 15 test strips provided for sanitizer in use. Obtain appropriate test kit within 10 days. several food contact surfaces, were observed to have food residue and was not clean to sight and touch: ice machine with mold like growth; slicer with previous days food accumulation still on it. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Clean the following areas: behind the cooking line including fryer; inside frozen of walk-in floor; interior of Microwaves; door handles on all refrigerators; floors of prep kitchen near all corners and walls; interior of all reach in refrigeration and freezers.
